Gnocchi with rosemary

What you need:

  • 250 g Gnocchi
  • 200 g bacon
  • 2 sprigs fresh rosemary
  • 3 cloves of garlic
  • 1 onion
  • 100 g of mushrooms
  • olive oil
  • parmesan
  • freshly grinded pepper

Bring water to boil and pour gnocchi with salt. Let them cook for 2-5 minutes (until they pop up on the water surface). The bacon fried until crisp and put on kitchen roll to remove some of the grease.

Chop onions in long, thin ‘boats’, mushrooms cut into quarters and garlic is cut (not squeezed!) Into small pieces. Take some rosemary leaves and tear them over.

Olive oil, garlic, rosemary, salt and pepper are slowly heated on a pan. When the oil has attracted flavor add onion and allow to boil for a few minutes. Then add mushrooms which are also allowed to fry a few minutes.

Now add the crispy bacon and about 2.5 tsp of grated parmesan.

The dish is seasoned with a little extra salt.

All the ingredients are stir fried with constant stirring for a few minutes until all is well mixed.

Served with a good soup and a freshly baked bread.
