The trick itself is quite simple: grab your favourite herbs and lay them straight on the grill before roasting your meat. It gives off an incredible scent around the grill and infuses your meat with a delicious smoky taste of herbs.

Here is how you do it

Start out by soaking the herbs for a few minutes before adding them to the grill. If you are using charcoal, put the herbs directly on the coals when they are ready. Which herbs to use?
