The trick itself is quite simple: grab your favourite herbs and lay them straight on the grill before roasting your meat. It gives off an incredible scent around the grill and infuses your meat with a delicious smoky taste of herbs.

Here is how you do it

Start out by soaking the herbs for a few minutes before adding them to the grill. If you are using charcoal, put the herbs directly on the coals when they are ready. After the initial smoke has cleared a bit, put on your meat and let the herbal scents work their magic. The taste is not intense, but enough so that you will notice the smoky notes of your favourite herbs.

Which herbs to use?
